Terran and River take an Italian Cooking Class at their home with Chef Steve to make a Water Melon Gazpacho and Panna Cotta with a Strawberry Balsamic Reduction.

Recipe For Watermelon Gazpacho

– 8 Cups of Watermelon
– 4 Table Spoons of Lime Juice
– 2 Table Spoons of Lime Zest
– 2 Teaspoons of Ginger
– 2 Teaspoons of Salt
– 2 Cups of Chopped Tomatoes
– 1 Cup of Cucumber
– 1/2 a Cup of Cilantro
– 1/2 a Cup Bell Pepper Green
– 2 Table Spoons of Serrano Pepper


Put all ingredients into blender until smooth

Recipe For Panna Cotta With Strawberry Balsamic Reduction

– 1 Cup of Whole Milk
– 3 Cups of Whipping Cream
– 1 Table Spoon of Gelatin Powder
– 1 Table Spoon of Sugar (Substitute Stevia)
– 4 Cups of Strawberries
– 2 1/2 Table Spoons of Balsamic Vinegar
– 1/4 Teaspoons of Pepper


Place milk in a bowl. Add gelatin to bloom for 4 minutes. Pour milk into a sauce pot on medium and stir until gelatin is dissolved. After 5 minutes, add cream, honey, sugar, and salt. Stir until all of the ingredients are dissolved. Remove from heat and pour into 6 wine glasses cool. Chill overnight.
