River and Terran Greenfield have prepared a magnificent asian-inspired anniversary dinner for their mom and dad because… *drumroll*… it’s their anniversary!!!

But the Greenfield siblings are not content with just any old dinner. They want to make this anniversary celebration truly special, so they put their heads together and come up with a plan to surprise their parents. It all starts with a handmade menu.

Make Your Own “Aged” Paper

For this, you’ll need a sheet of white paper (thicker paper works best), a cup of STRONG coffee or black tea, and a lighter (Kids: Please don’t ever use a lighter without permission.  Kids of all ages: Be sure that you are near a water source in case the paper catches fire quicker than expected).

First Step: Crumple the paper to create wrinkles that would suggest an old, well-loved sheet of paper. 

Second Step: Lay the paper on a small cookie sheet or other vessel that will allow the paper to lay flat, and pour the coffee or tea over the paper so that it is submerged, and set aside for 15 minutes or more (the longer you allow it to sit, the darker the staining)

Third Step: Very carefully remove the paper from the liquid and lay over a drying rack.  Allow to dry completely.

Fourth Step: Once fully dried, gently tear the edges of the paper in several locations to give it a more aged look.

Fifth Step: Use the lighter to singe the edges (careful not to let it catch fire).

Sixth Step: Write your letter or create your drawing and enjoy the finished product!

(The twins reversed these first two steps.  Either order works, but the wrinkles will be more defined if they are made before staining.)

Meet the Guests of Honor

For those who don’t know – there may be one or two of you in the crowd – Ben Greenfield is not just dad to River and Terran.  He’s a renowned health and fitness icon, with a reputation for pushing the limits and taking on the toughest challenges. He’s competed in triathlons, obstacle course races, and even the Ironman competition. He is also an author and speaker, sharing his expertise on health, nutrition, and biohacking with audiences all over the world.  Read that as – he’s a busy guy!

While dad is traveling, the twin’s mom, Jessa is not just raising two boys, she’s homesteading on their Washington property, maintaining peak physical fitness, making special appearances on podcasts and YouTube channels (including GoGreenfields), and preparing the meals that inspired River’s and Terran’s love of cooking.

A Winning Tradition

With all of the responsibility and travel, Ben and Jessa don’t have a lot of time to do anything special for themselves, so River and Terran have made it a tradition to prepare an anniversary dinner for two!  This year, they decided to give it an Asian theme, and for that reason, they included Gyoza on the menu.

Japanese Gyoza 

Ingredients
  • ¼ head of green cabbage finely chopped
  • ½ teaspoon + ½ teaspoon salt
  • 1 lb minced pork
  • ¾ cup chopped chives
  • 1 crushed garlic clove
  • 1 teaspoon grated ginger
  • 1 teaspoon sesame oil
  • 1 Tablespoon + 1 teaspoon cornstarch
  • 2-3 teaspoons soy sauce
  • 40 wonton wrappers
  • 3 tablespoons olive oil
  • 1 cup water

 

Directions
  1. Combine ½ teaspoon salt and cabbage and set aside
  2. Mix pork, chives, clove, ginger, oil, 1 tablespoon cornstarch, and soy sauce
  3. Add cabbage to mixture and stir until fully combined
  4. Sprinkle baking tray with 1 teaspoon cornstarch
  5. Place 1 tablespoon of filling on the wonton wrapper and use dampened fingers to fold and seal securely, then place on the baking sheet.  Repeat until all wonton wrappers are used.
  6. On medium, heat about a third of the olive oil in a large skillet
  7. Add wontons to cover the bottom of the pan and cook for 2-4 minutes, or until the bottoms are golden
  8. Add a third of the water to the skillet and cover.  Cook for an additional 2-4 minutes until wrappers begin to look slightly transparent.
  9. Remove wontons and place golden side up on a plate.  Repeat the process with remaining wontons.
  10. Serve and enjoy!
