Terran and River get in the spirit of Christmas by making healthy marshmallows with chocolate fondue and seasonal eggnog for desserts for their Christmas Eve Dinner.
Eggnog
Ingredients
- 2 1/4 cups of unsweetened almond milk
- 1 can of full fat coconut milk (13-14 oz.)
- 1/2 cup of bourbon or brandy (optional)
- 1/3 cup of agave syrup, maple syrup or honey
- 4 large egg yolks
- 1 teaspoon of vanilla extract
- One teaspoon of ground cinnamon
- 1 teaspoon of freshly grated nutmeg
- 1/8 teaspoon of ground allspice
Directions
- Place the almond milk, coconut milk, maple syrup ,cinnamon, nutmeg and allspice in a pot.
- Set the stove to medium high heat.
- Remove the milk mixture from heat just before it boils.
- Whisk egg together with vanilla. Pour your milk
over the eggs slowly and continue to stir the mixture. Do this so the eggs don’t get scrambled. - Cover and chill in fridge overnight.
- To properly serve it blend the egg nog for about 2 minutes so it gets nice and frothy.
- Enjoy!
Marshmallows
Ingredients
- 1 cup of filtered water
- 3 tbls of grass fed gelatin
- 1 cup of organic honey
- 1 tsp of organic vanilla
- 1/4 tsp of sea salt
- 1/4 cup of arrowroot powder
Directions
- Grease an 8×8 pan and line with unbleached parchment paper in both directions. Leave some length to use as handles when removing the finished product.
- Sprinkle the pan with arrowroot powder. In a mixer add the gelatin with 1/2 a cup of water.
- While gelatin is softening, pour the other half a cup of water into a sauce pan along with the honey, vanilla and the salt.
- Turn the burner to a medium high heat, bringing the mixture to a boil.
- Place a candy thermometer and in the sauce pan and continue to boil the mixture to 240º. Immediately remove the sauce pan from the heat.
- Turn on your mixer on low/med. Slowly pour the honey mixture into the bowl combining it with the softened gelatin.
- Turn the mixer to high and continue beating the mixtures together until it becomes thick like marshmallow crème.
- When finished pour in to 8×8 pan Sprinkle the remaining two tablespoons of arrow root powder. And top and then pat it down so its smooth.
- Let the pan set out on the counter for at least 4 hours or over night to set, then cut the marshmallows into cubes.
Fondue
Ingredients
- 2/3 cup of almond milk
- 1 can of coconut milk
- 1 bag of chocolate chips
- 1/4 tsp of vanilla extract
Directions
- Mix into a fondue pot (if you have one). If you don’t, use a double boiler, then put on stove at medium high and cook until it’s smooth and creamy.
- Then let the dipping begin!
