In this episode of GoGreenfields, River and Terran make a Spiced Banana “Oatmeal” without any oats.  This is perfect for the gluten-free family or the individual trying to cut down on carb consumption. Autumn is a great time to try out this fantastic recipe because it works so well with the seasonal root vegetables.  It’s also great fun to make together as a family because it is entirely customizable.  We can’t wait to hear all the ways you make this your own!

Spiced Banana “Oatmeal”

Ingredients
  • 3 cups Cooked Spaghetti Squash
  • 2 1/2 cups Canned, Full-Fat Coconut Milk
  • 1 1/4 cups Unsweetened, Shredded Coconut
  • 2 Medium-size, Ripe Bananas, Mashed
  • 2 tsp Ground Cinnamon
  • 1/4 tsp Sea Salt
Directions

1. Combine the squash, coconut milk, coconut, bananas, cinnamon, and salt in a large saute pan or skillet over medium-high heat. Bring to a boil. Reduce the heat to low and simmer, stirring often, for 3-5 minutes.

2. Puree with an immersion blender to break down the squash a bit, while still leaving some texture. Serve in bowls with desired toppings.

For the topping: sliced bananas, shredded coconut, coconut milk, and maple syrup (optional) — or get creative!
