In this episode of GoGreenfields, River and Terran tackle a childhood favorite!  Doughnuts are generally carb-rich, deep fried, sugar-overloads.  However, with this recipe (shared below), the co-hosts present a treat tasty enough to appease kids, and healthy enough to make parents cheer. The ingredients included provide a number of health benefits.  In addition to promoting joint and muscle health, these doughnuts contain colostrum, which has been shown to help boost the immune system and beneficial bacteria in the gut.

River and Terran tried two different toppings for these vitamin rich treats.  The first was a combination of peanut butter and honey.  The second was a cream cheese & coconut frosting.  What topping would you choose?

Healthy Donuts

Ingredients
Directions
  1. Preheat Oven 375°.
  2. Add dry ingredients to a bowl and whisk together.
  3. Add wet ingredients to a separate bowl and whisk together.
  4. Add whisked wet Ingredients to the dry bowl. Whisk until semi-thick consistency.
  5. Add mixture into a silicone doughnut mold.
  6. Bake in the top rack of the oven for 10-15 minutes.
  7. Make frosting while doughnuts bake.
  8. Let doughnuts cool for about an hour before frosting and topping.

Peanut Butter Honey Frosting

Ingredients
  • 2 T peanut butter
  • 2 T raw honey
  • 1 tsp vanilla extract
  • Pinch sea salt
  • Cacao nibs
Directions
  1. Blend peanut butter, raw honey, vanilla extract, and a pinch of sea salt. 
  2. Top with cacao nibs.

Cream Cheese Coconut Frosting

Ingredients
Directions
  1. Blend cream cheese with vanilla extract, a pinch of sea salt, and a handful of candied ginger
  2. Top with coconut flakes.
