Coconut Yogurt
Terran and River team up with their Father (Ben), a scientist, to make a special kind of Coconut Yogurt that has a number of health benefits. Ben found the recipe in a book by William Davis called Undoctored.
The yogurt recipe uses a special strain of probiotic that is good for weight loss and it suppresses your appetite by keeping you more satiated. It also increases your skin collagen and health of your skin, hair and nails. It doubles the level of oxytocin, known as the love hormone, which makes you feel so much better about yourself.
Take a listen to the episode as Terran and River give you step by step instructions for this wonderful Coconut Yogurt recipe.

hi
thanks for this recipe!
it would be super helpful if you listed the steps in writing as its a little tricky to follow in audio format.
I also got the Undoctored book (in kindle format) but can’t seem to find the recipe there.
Thanks Terran and River for posting this yogurt Receipt. I have a questions, our first round of the yogurt smells really bad. Does it improve after the next round? At this point only the toughest person would consider eating the yogurt with how bad it smells.
Thanks again guys!
Cullen
How often should we eat it and in what quantities. Also for how many days this yogurt remains good.
Hi Terran and River, how do you guys save/store the starter? Thank you!
I’ve tried this twice now, second sanitized everything prior to making. It smells/tastes SO bad. Any suggestions on what I could be doing wrong?
Hi Sarah, you are likely doing it correctly. The recipe does have a slightly sulfurous smell. Truly healthy, ‘real’ yogurts are more of an acquired taste than commercial varieties.
Hello.can you tell me.if we heat the milk first like it says to in a yoghurt maker instructions
You would heat the milk first. That brings the temperature of the milk to an ideal temp for growing cultures.
Hi I have made this and.have more liquid whey than I do yoghurt…also the yoghurt is kinda curdled….is this ok.to eat…what should I do with the liquid whey?.stir it in? Don’t want.this to give me an upset stomach if there is something wrong with it
It’s ok. They whey is good. You can consume it or you can strain it off and get rid of it.
Thanks for this great podcast! 2 questions:
1) Can I use maple syrup instead of sugar for the initial feeding?
2) How long does each batch stay good for?
3) How much of the starter curd do you skim for the next feeding – is it 3 tbs worth? And when making the next batch, do I use the starter, plus 1 tbs inulin and 1 tbs sugar once more, or just the starter plus 2 C coconut milk?
Can you put this in an instant pot instead of a dehydrator?
Hi fellas
Love what you’re doing! You guys give me ideas of activities for my son when he gets a little older!
Question for your guest scientist…
what would a recommended serving size be to get the minimum effective dose of bacteria?
How long can the starter stay in the fridge? Do you have to feed it every few days/weeks/fortnights?
Thanks very much!
How much Gelatine do you stir in at the end per 2 cans of milk???
Good on you little legends by the way!!
I am also awaiting your answer to these questions. Especially from Rainy.
1) Can I use maple syrup or coconut sugar instead of cane sugar for the initial feeding?
2) How long does each batch stay good for?
3) How much of the starter curd do you skim for the next feeding – is it 3 tbs worth? And when making the next batch, do I use the starter, plus 1 tbs inulin and 1 tbs sugar once more, or just the starter plus 2 C coconut milk?
I apologize for the wait. You can actually find all of the answers to your questions on Dr. William Davis’s website (wheatbellyblog.com) and also in Dr. William Davis’s book Undoctored.
Thank you so much!
In the BioGaia Gastrus probiotics it has fully hydrogenated vegetable oil (palm oil) in it. Isn’t this very toxic? Does it go away after fermenting? Is there any other company with this specic probiotic strain that doesn’t have hydrogenated oil in it?
Hi Jasmine,
Thank you for your concern and your support of the podcast! Our dad, Ben Greenfield supports our use of palm oil. He shared this link with us, which tells all about the health benefits of palm oil: https://www.organicfacts.net/health-benefits/oils/palm-oil.html
Have you tried this yoghurt with coconut cream? A higher coconut flesh content in the coconut milk (80% coconut flesh and 20% water)?
Hello there..can I use unpastured raw milk? Also I bought a yoghurt maker..but it’s instructions are to heat thmilk first ..then add the culters is this correct ..it also says just leave for 12 hours ..will this be long enough?
Yes. You heat the milk to about 109 degrees and then add in the culture. Good luck!
Davis recipe calls for gelatin. I don’t think you have it mentioned in your recipe is it okay without it?
River and Terran will be answering you in an upcoming episode of GoGreenfields!
Can the Bio Gaia tablets be used to populate other lacto-fermented items such as beet Kvass or Sourdough Starter ? Perhaps cooking the sourdough would ruin the amazing Gaia strains, but was curious if you’ve ever tried it ! Thanks Kiddos – Tyson
It could possibly work, but we’ve never tried it!
I like the sound of this ive ordered a Coconut Yogurt Starter Kit, as I have problems with dairy makes me sneeze etc…
Way to go little Greenfield chefs, you killed it. Just collected all the ingredients and I can not wait to make it😎
Awesome! Have fun with it, and tell us how it came through!
