Happy Tongue Taco Tuesday!

Tongue Taco

Ingredients
  • 2 beef tongues
  • 1 big white onion
  • 10 cloves of garlic
  • 2 teaspoons of oregano
  • 2 teaspoons of salt
  • 1 1/2 c milk
  • 2 c of grated cheese
  • Tortillas
Instructions
  1. First, chop onion into wedges and smash garlic.
  2. Then add all the ingredients into a crockpot and cover it all with boiling water.
  3. Set the crockpot to low.
  4. Cook for 8 hours or overnight. When the tongue is done cooking remove it from the crockpot and allow to cool in the refrigerator.
  5. Once cooled, take it out of the fridge and peel off the skin. Then cut the tongue into ¼ inch cubes.
  6. In a large skillet heat 2 Tbsp of oil.
  7. Add cubed tongue to the skillet and season with salt and pepper. Saute until the tongue is browned.
  8. Then serve on a tortilla with pickled radishes and chimichurri and enjoy!

Chimi Churri 

INGREDIENTS
  • 1 shallot finely chopped
  • 1 fresno chile
  • 3-4 garlic cloves
  • ½ cup red wine vinegar
  • 1tsp kosher salt
  • ½ cup finely chopped cilantro
  • ¼ cup finely chopped flat leafed parsley
  • 2 tbsp finely chopped oregano
  • ¾ cups extra virgin olive oil (from fresh pressed olive oil club!)

Instructions:

  1. Combine shallot, chile, garlic, vinegar, and 1 tsp salt in a medium bowl. Let it sit for ten minutes.
  2. After ten minutes stir in cilantro, parsley and oregano. Using a fork whisk in oil.
  3. That’s it!

Quick Pickled Radish Ingredients:

  • 3-4 tsp of salt
  • 2 bunches of radishes
  • 1 whole onion
  • ¾ cups apple cider vinegar
  • 3 TBSP of honey
  • 1 teaspoon of red pepper flakes

Instructions:

  1. Thinly slice all the radishes and then cut onions into thin half moons and then add everything into a bowl and mix well.
  2. Let it sit on the counter for at least an hour.
  3. Then enjoy!
